It’s officially cookie season so you all know that it’s time to get busy baking – and these palmier cookies easy, delicious, and great to include in your cookie repertoire. You only need four ingredients (if you buy ready-made puff pastry) and you’ll be eating them in less than an hour! They taste like cinnamon rolls, but are crunchy and have a slightly chewy center.

Vegan Cinnamon Palmier Christmas CookiesPrint Recipe
- 2 sheets vegan puff pastry sheets
- 1/4 cup melted vegan butter
- 1/2 cup cane sugar
- 1 tbsp cinnamon
Let the vegan puff pastry thaw for 40 minutes at room temperature while you mix the sugar and cinnamon together in a small bowl.
When the puff pastry is thawed, roll it out slightly using a rolling pin and then melt the vegan butter.
Use a pastry brush to apply the vegan butter on to the first side of the dough.
Generously sprinkle the cinnamon sugar on top until fully coated and then roll again using the rolling pin. This will ensure that the sugar is pressed into the dough and won't fall out when you roll it into the palmier cookies.
Carefully flip the dough over and repeat the steps above on the other side. You'll want both sides of the dough to be covered in butter and the cinnamon sugar.
Estimate where the center of the dough is, and roll each end of the dough until both sides meet at the center.
Place in the fridge for 20 minutes for the dough to harden slightly before cutting into 1/2" slices with a sharp knife.
Preheat the oven to 350f and bake the palmier cookies for 30 minutes or until golden brown and crispy.
Allow to cool for 10 minutes and then enjoy!
